2/3 Cup + 2 T Graham Cracker Crumbs
2 T. Butter
1/2 cup unsweetened chilled Orange Juice
1/2 cup instant nonfat dry milk
1 Egg White
1 T. Lemon Juice
1 – 8 oz. can crushed pineapple (drained)
4 pks Sweetener of choice (Stevia, etc) optional

Directions:
Mix together 2/3 cup of Graham Cracker crumbs and butter.
Press mixture into an 8″ square pan.
Mix your orange juice, dry milk, egg white and lemon juice at high speed for 3 minutes.
If you want it a little sweet mix your sweetener in and blend an additional 3 minutes.
Next fold in your pineapple (drained).
Pour into your prepared graham cracker crust.
Sprinkle your remaining 2 T of graham cracker crumbs on top.
Place in freezer for at least 6 hours.
Enjoy!

Ingredients:
2 lettuce leaves (suggest iceberg or romaine/cos)
2 hard boiled eggs
1/2 – 1 tsp curry powder (adjust to your own taste)
1 Tbsp coleslaw or ranch dressing or mayonnaise (choose a zero carb one)

In a bowl, chop eggs into small pieces. Add curry powder and dressing and mash together with a fork. Divide mashed egg mix between 2 or more lettuce leaves and season with salt and pepper, according to your taste. Roll up lettuce leaves making a parcel with the egg mix enclosed. Enjoy!

Makes 75 delicious snowballs. Thanks for Seleta’s Yummy Delicious Chocolate Almond Snowballs
Ingredients:
12 ounces of semi-sweet chocolate chips
1 can (14 oz) sweetened condensed milk
1 teaspoon pure vanilla extract
1/2 cup finely chopped toasted almonds
1/4 teaspoon coarse salt
2/3 cup finely shredded unsweetened coconut
75 whole Almonds

Instructions:
Melt Chocolate in microwave for about 2 minutes.
Stir until smooth, then add the sweetened condensed milk, vanilla, chopped almonds, and salt. Stir until combined.
Let cool.
Roll mixture into 1-inch balls.
Place coconut on dinner plate, roll balls in coconut to coat evenly.
Lightly press 1 almond in the center of each cookie ball.
Chill until set, about 30 minutes or up to 5 days.
Serve and Enjoy!!!

Cajun Sausage And Rice Bowl

CAJUN SAUSAGE AND RICE BOWL

You will love this cajun sausage and rice bowl.

Ingredients:
1 Bell Pepper
1 Onion
2 Packs of Smoked Sausage of your choice (I use Eckrich Smoked Sausage)
4 Cups Rice
Canola Oil for Pan
Tony Chachere’s Creole Seasoning To taste (Beware if u use to much it can get spicy)
Paprika for Color
Enough water to Cover
Corn Starch ( for thickening)
In a Cast Iron Skillet only

Directions:
In cast iron skillet, pour enough oil to cover bottom about 1/2 inch.
Cut up Sausage.
Cut bell pepper and onion in strips.
When grease gets hot, place sausage in oil sprinkle and with seasoning whikle stirring and adding a lil more seasoning.
Cook on high stirring often.
You will begin to get what is called a Gratin which is the sticky stuff in bottom of pan. Scrape it up as you stir. Turn heat to medium.
Add Veggies and stir about 5 Minutes.
Add Paprika To get a red color.
Add water to cover entire dish.
Continue to scrape bottom of pan, that is how you get your gravy.
Cook for about 10 min longer or until veggies are soft.
Take a small amount of corn starch in a bowl add water a lil at a time to make
a paste to thicken your gravy.
Serve over Rice of your choice.
