Makes a great light lunch! Lexie’s Low Carb Curried Egg And Lettuce Rolls shared by Lexie
2 lettuce leaves (suggest iceberg or romaine/cos)
2 hard boiled eggs
1/2 – 1 tsp curry powder (adjust to your own taste)
1 Tbsp coleslaw or ranch dressing or mayonnaise (choose a zero carb one)
In a bowl, chop eggs into small pieces. Add curry powder and dressing and mash together with a fork. Divide mashed egg mix between 2 or more lettuce leaves and season with salt and pepper, according to your taste. Roll up lettuce leaves making a parcel with the egg mix enclosed. Enjoy!
